Tuna Embutido
Ingredients
300 g tuna fillet, chopped
1 large onion, chopped
1/4 cup raisins
1 pc pork boullon cube
1 can (234 g) Fresh Cut crushed Pineapple, drained (reserve syrup)
1 medium red bell pepper, diced
1 small carrot, coarsely grated
1 egg
1 stalk celery, chopped
1/4 cup flour
Procedure
1. Marinate fish in pineapple syrup, 1/2 tsp iodized fine salt and 1/4 tsp pepper for 10 minutes. Drain. Discard marinade.
2. Combine fish with remaining ingredients. Season with 3/4 tsp iodized fine salt and 1/4 tsp pepper. Mix well. Divide into 3.
3. Wrap in foil then roll. Steam for 30 minutes. Cool. If desired, brown all sides in oil. Slice and serve with ketchup.

Meatball Surprise
Ingredients
24 pc quaileggs, hard-boiled and shelled
Meatballs:
1/4 kg ground pork
50 grams shrimps, pelled and chopped
1/4 cup carrot, chopped
1 medium onion, chopped
2 stalks green onions, chopped
1/2 cup bread crumbs
1 pc egg
Sauce:
1 pouch (115 g) Tomato Sauce
3 tbsp Banana Ketchup
1 tbsp Red Cane Vinegar
6 tbsp Sugar
1 cup water
1 medium carrot, diced
2 stalks celery, cit 1" long
1 medium red bell pepper, cut into squares
2 tbsp cornstarch, dissolved in 3 tbsp water
1 can (234g) Fresh Cut Pineapple Chunks, include syrup
Procedure:
1. Combine ingredients for meatballs. Season with 1/3 tsp fine salt and 1/4 tsp pepper. Mix thoroughly. Coat each quail egg with i tbsp of meat mixture. Shape into balls. Deep fry until golden brown. Set aside.
2. SAUCE: Combine first 6 ingredients. Bring to a boil. Add remaining ingredients. Cook until thick. Pour over meatballs.
MAKES 8 SERVINGS
Tip: Dampen hands with oil before working with meatball mixture.
Monkey Peanut Butter Bars
INGREDIENTS
- 1 cup confectioners' sugar
- 1/4 cup peanut butter
- 3 1/2 tablespoons milk
- 1/2 cup butter
- 1/2 cup white sugar
- 1/2 cup packed brown sugar
- 1/3 cup peanut butter
- 1 egg
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1 cup all-purpose flour
- 1 cup rolled oats
- 2 cups semisweet chocolate chips
DIRECTIONS
- Cream butter and white sugar and brown sugar. Blend in 1/3 cup peanut butter, egg, vanilla, and baking soda. Add flour and oatmeal. Mix well!
- Spread in greased 13x9 inch baking pan. Bake at 350 degrees F (175 degrees C) for 20 minutes. Remove and sprinkle with chocolate chips.
- Return to oven and bake for eight minutes. Spread to smooth out chocolate chips. Cool! Mix icing and spread over bars. Refrigerate to set. Cut and eat.
- To Make Icing: Mix together 1 cup confectioners' sugar, 1/4 cup peanut butter and 3 1/2 tablespoons milk until it makes a spreadable consistency.
Cleaning Greasy Dishes

Beef- Hominy Casserole
Beef-Hominy Casserole

1 lb. ground beef
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 (15.5 -oz.) can white hominy, drained
1 (15.5 -oz.) can golden hominy, drained
1 (14.5 - oz.) can diced tomatoes
1 ( 4 - oz.) can chopped green chiles
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup sharp cheddar cheese, grated
1. Heat oven to 350 degree F. Butter 13 x 9- inch baking dish or casserole. Cook beef in large skillet over medium- high heat until browned; drain. Add onion and bell pepper; cook 3 minutes or until softened. Stir in all remaining ingredients except cheese. Spoon into baking dish.
2. Bake 40 minutes. Remove from oven; sprinkle with cheese. Bake 10 minutes or until cheese is melted.
4 ( 1 and 3/4 cup) servings
Per Serving: 465 calories, 24 g total fat ( 11 g saturated fat), 29.5 protein, 32 g carbohydrates, 95 mg cholesterol, 1100 mg sodium, 6 g fiber.
Getting Rid of the Fishy Smell
Whenever you fry a fish, add a few strips of ginger in the oil and some strips on the fish. This would remove the unpleasant fishy smell and taste and would bring out more flavor to the fish. | |
Oatmeal Peanut Butter Cookies
INGREDIENTS
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup butter, softened
- 1/2 cup peanut butter
- 1/2 cup white sugar
- 1/2 cup packed light brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup quick cooking oats
- 3 tablespoons butter, softened
- 1 cup confectioners' sugar
- 1/2 cup smooth peanut butter
- 2 1/2 tablespoons heavy whipping cream
DIRECTIONS
- In a large bowl, cream together 1/2 cup butter or margarine, 1/2 cup peanut butter, white sugar, brown sugar, and vanilla. Add egg and beat well.
- In another bowl, combine the flour, baking soda, baking powder, and salt. Add these dry ingredients to the creamed mixture. Stir. Add oatmeal and stir.
- Drop by teaspoons onto greased baking sheet, and press each mound down with a fork to form 1/4 inch thick cookies. Bake at 350 degrees F (175 degrees C) for 10 minutes, or until cookies are a light brown.
- To Make Filling: Cream 3 tablespoons butter or margarine with the confectioners' sugar, 1/2 cup smooth peanut butter, and the cream. Spread filling onto half of the cooled cookies, then top with the other half to form sandwiches.
