Kinilaw (Raw Fish)
Check out this Asian dish called "Kinilaw" in the Philippines. If you have tried the Latin American dish called ceviche, this dish Kinilaw is very similar to it. The sour agent is very important to sort of cook the raw fish. Most people use a combination of vinegar and lime juice with tomatoes, union, gingerroot, bell pepper, jalapeno peppers, spring onion, salt and pepper. It is very important that the ingredients are fresh, especially the fish. The fresher the fish, the more delicious the dish will be.
